What is the Santolla Crab?

Santolla crab, Lithodes santolla, is a species of crab harvested from the southernmost parts of South America, particularly Patagonia and the Tierra de Fuego regions. This crab inhabits the waters along the South Pacific Continental Shelf, usually found at depths around 500-600ft. The Santolla is often referred to as “Southern King crab”, but is not officially recognized by the FDA as a King crab species.

At harvest, a sexually mature Santolla crab typically weighs 3–4 pounds and has a carapace length of 4.5 inches(+). Though they can reach larger sizes, the average Santolla is roughly half the size of a Red King crab and their meat yield is significantly lower.

When it comes to flavor, Santolla is known to have a saltier, brinier taste and a less sweet profile.  Some prefer this taste profile, while others find it less satisfying than the rich, buttery flavor of the Alaska King crab.

In comparison, Santolla legs tend to be smaller with a much spinier shell. It requires more effort to crack and offers less meat yield.

Flavor is another key differentiator. Alaska King crab is prized for its naturally sweet flavor and outstanding texture. It is a delicacy worldwide, perfect for fine dining, special occasions, or premium retail offerings. While Santolla can be more affordable, it simply doesn’t deliver the same luxurious experience.  So in the end, if you’re looking for unmatched quality, flavor, and sustainability, Alaska King crab is still king.
