A Simple Way to Elevate Summer Dining
Summer meals are all about fresh flavors, easy entertaining, and dishes that feel a little more special without spending hours in the kitchen. That’s exactly why fresh crab tacos deserves a spot on the table.
Light, flavorful, and something different that what you’d typically see in a seafood taco, these tacos combine sweet crab meet fresh corn salsa, melted cheese, and a creamy cilantro lime sauce. Inspired by The Perfect Tide, this dish brings together the coastal flavors of the Pacific Northwest that feel perfect for warm-weather dining.
Here’s What You’ll Need:
Taco Ingredients
- 2 cups of fresh crab meat
- Pinch of salt for the crab
- Corn tortillas
- 2 cups of your favorite shredded cheese
- 3 table spoons of butter
Corn Salsa Ingredients
- 2 cooked ears of corn or 15 oz can of corn
- 2 cups of chopped cherry tomatoes
- 6 stalks of diced green onions
- 1/2 cup of chopped cilantro
- 3 tablespoons of diced jalapeños
- 5 cloves of minced garlic
- 2 table spoons of extra virgin olive oil
- 1 lime to zest and juice
- 1/2 teaspoon of salt
Garlic Cilantro Taco Sauce
- 1 cup of sour cream
- 1/4 cup of mayonaise
- 3 cloves of garlic
- 1/2 cup of cilantro
- 1 lime to zest and juice
- 1/2 teaspoon of salt
Steps to Make It:
Corn Salsa Instructions
- Cut the corn off the cobs and place into a large bowl. If you’re using canned corn, drain you can and then add the corn to a bowl.
- To that bowl, add chopped tomatoes, diced green onions, chopped cilantro, diced jalapeños, minced garlic, the zest and juice of 1 lime, olive oil, and salt.
- Stir everything together, then cover and place in fridge until ready to use.
Garlic Cilantro Taco Sauce Instructions
- In a blender or food processor, add the garlic, cilantro, mayo, salt and lime juice. Blend until thoroughly processed.
- Add the sour cream and stir to combine. Place in fridge to get cold and harden a bit if you have time, otherwise serve as is.
Taco Instructions
- In a skillet on medium heat, add in about a 1/2 table spoon of butter and let melt.
- Place a corn tortilla in the pan to crisp on one side, then flip
- Immediately after flipping add a handful of shredded cheese and crab to the top of the tortilla.
- Once the cheese has melted and the crab is warmed, remove the taco from the skillet and place on a serving plate.
- Top each taco with the corn salsa and garlic cilantro sauce to serve!
